Quinoa, Strawberry and Asparagus Salad


  • 1 cup of uncooked quinoa.
  • 1 vegetable stock cube (I use kallo yeast free).
  • 1 Tbs of coconut oil.
  • Half a red onion sliced into half moons.
  • 2 minced garlic cloves.
  • Half a Tsp of coriander.
  • 12 strawberry washed and chopped.
  • 12 asparagus tips washed and cut into 1cm sticks.
  • 12 fine green beans washed and cut into 1cm sticks.
  • Small handful of frozen peas.
  • Half a lemon juice.
  • A splash of olive oil.


  1. Start by dissolving the stock cube into a pint of boiling water then in a saucepan add the uncooked quinoa and let simmer for 10 minutes or as per instructions on the pack.
  2. Heat the coconut oil in a large frying pan, wok or skillet.
  3. Add the onion, garlic, and corinader and keep stiring until the onion has softened and is a translucent colour.
  4. Next add the green beans, asparagus tips and peas and stir all together on low for about 5-10 minutes.
  5. Mix together in a bowl the lemon juice and the olive oil and stir into your mixture.
  6. Add the strawberry and stir well.
  7. Drain the quinoa and add to the mixture and stir all together for a few more minutes.
  8. Finally serve and enjoy!
