Kicking Greens With a Crunch

As most of my diet is plant based it is natural to get bored, but I find that this is when the magic happens. I created this lovely side dish one day when I was slightly bored with the usual steamed veg. Now I have it at least twice a week. I’m not going to put the exact amounts because 1) My diet is mainly plant based so I literally fill my plate with greens and that might be too much for some people and 2) everyone’s taste is different so adjust the veg to your tasting and your preference.

Broccoli florets

Asparagus spears

Green bean

Brussel sprouts

Wash all the veg and cut the sprouts in half.

Heat 1 tablespoon of coconut oil in a frying pan and when its melted add all the veg.

Stir fry on medium for about 10 minutes making sure to keep stiring to prevent sticking. I like mine to be a bit browned around the edges.

Then add a tablespoon of sliced almonds and carry on stir frying until the almonds become slightly toasted.

Turn the heat of and lastly add a small shake of dried chillies, give it all a stir and serve with your favourite main dish. I love it with my Classic Omelette with a kick.
