Classic Omelette With a Kick

I am going to let you into a little secret, the only reason I cannot commit to becoming a vegan is because I just love eggs too much. There Ive said it, so its little surprise that most things I cook have eggs in there somewhere and one of my favourite food off all time is the classic omelette. But As I am me and do not like to follow rules and instructions I am going to share with you my recipe for the classic omelette with a slight twist on it.

Take 2 very large free range casino online or organic eggs and lightly beat.

Add 2 pinches or shakes of cayenne pepper and 2 pinches or shakes of tumerick

Add some salt and pepper to taste and beat together again.

Heat 1 tablespoon of coconut oil in a large frying pan and once the coconut oil has melted add the egg mixture.

Now at this point I like to turn down the heat and add a lid for 5 minutes or until the omelette has cooked through. I find that this makes the omlette lovely and fluffy rather than rubbery.

Serve with your favourite Salad or Kicking greens with a crunch over on my Sides and Snacks page.
